Scandinavian Red Cabbage

Ingredients
1 large head of red cabbage4 tablespoons butter2 tablespoons sugar1/4 c. water1/4 c. red wine vinegar1 teaspoon salt1/2 teaspoon pepper3 apples - Tart ones work well
Directions
Shred the cabbage. Melt the butter in a laarge pot and add shredded cabgage and sugar. Stir and cook for a few minutes. Add water, vinegar, salt and pepper. Cover and cook slowly for 1 1/2 hours.

Core and chop the apples. Add them to the cabbage. Cover and cook for another 1/2 hour. Add more sugar or salt if needed.

Serving Size: Makes 8-10 one-cup servings
