Atlantic Coast Chowder

Ingredients
1 lb bacon1 med onion cut in thin slices2-3 cloves garlic2 1lb. 12 oz. cans diced tomatoes2 c. water2 c. white cooking wine2 c. raw cubed potatoes1 tsp paprika2 tsp. basil2 ts thyme1 tsp. salt2 lbs fresh fishparsley flakes
Directions
Cook bacon, onion, & garlic in large pot till cooked and onion transparent. Drain if desired. Add tomatoes, water, wine, potatoes, paprika, basil, thyme, and salt. Simmer in covered pot for 1 hour. Add fish and simmer 5 min or till fish flakes easily. Add parsley to flavor. May be topped with Parmesan cheese.
