Christmas Meringues

Ingredients
3 large egg whites (room temp works best)1/8 tsp kosher salt1/3 cup sugar1/2 cup powdered sugar1/8 tsp peppermint extractgreen or red food color (desired color and quantity, usually use 4-5 "drips" of the gel coloring)
Directions
preheat oven to 200 degrees (I usually preheat to 250 so that when I open the oven door to put in the cookies it is still 200 degrees when I close the oven)

beat egg whites and salt until white and foamy (roughly 1-2 minutes)

gradually add granulated sugar (put in about 1/2 at a time and beat 2-3 minutes with each half)

beat in powdered sugar and peppermint extract - just until combined

TURN OFF MIXER

drizzle in food coloring but DO NOT combine.

Spoon into pastry bag and "drop" onto parchment paper lined cookie sheet

put in oven at 200 degrees for 2 1/2 hours. Take out of oven and let cool for one hour.

2nd cooking option - called forget me nots - preheat oven to 275 degrees. Put cookies into oven and bake for 15 minutes...turn oven off, but leave cookies in oven overnight. They are ready to go the next morning.
