Coconut Meringue Cookies

Ingredients
1 1/2C Coconut, sweetened & shredded 3 Egg whites1/4 tsp. Cream of Tarter (if humid add another 1/4 tsp)1/4 tsp. Vanilla Extract2/3 C Granulated Sugar 1/8 tsp. Salt
Directions
In a non-metal bowl, Beat egg whites, salt & Cream of Tarter until soft peaks form. Gradually add sugar, and vanilla and beat until peaks are stiff and glossy.

Drop by rounded teaspoon (tsp.) onto greased baking sheet, bake at 325 degrees 18 minutes until tops are slightly browned (center will be soft). TURN OFF OVEN and allow cookies to cool in oven. (or they will flatten)
