Shut up and eat your sodding lentils!

Ingredients
1 pound bag of lentils ($1 at most grocery stores!)1 8 oz can chicken broth2.5 cups salsa10 oz package of your favorite frozen veggies4 cloves garlic, chopped1 cup chopped onionsSpices as preferredI use 4 tsp curry powderand 1 chopped hot pepper
Directions
Chop fresh veggies.
Combine them with spices and chicken broth in a large pot or slow cooker. Pour in lentils. Allow mixture to soak for 3-5 minutes, then add other ingredients and pour water over the top of the pot until everything is covered.

Lentils soak up liquid like crazy! They are best eaten when slow cooked or allowed to soak for a couple hours before cooking. When using a pot, I put this stuff together, then go to work, and heat it when I come home. It only really needs to cook for 25-30 minutes, though.
