Roasted Potatoes with Broccoli

Ingredients
1/2 bag frozen broccoli florets2 small potatoes, cubed1 shallot, sliced1 tsp minced garlic1 tsp salt1/2 tsp pepper1 Tbsp Extra Virgin Olive Oil
Directions
cube potatoes, slice shallot and combine with all other ingredients. Spread onto a foil lined baking sheet and roast at 450-500 degrees for about 30 minutes or until potatoes are tender and lightly browned. Makes 2 servings.
