Green Chili Frittata

Ingredients
1/4 cup flour1/2 tsp baking powder5 eggs1 cup small curd, fat free cottage cheese1 cup grated jack cheese (use pepper jack for extra spice and flavor!)6 oz. diced green mild chilies1 cup cornSalt & pepper to taste
Directions
Preheat oven to 350*F.
Grease (spray) 9X9" baking dish.
Mix all the ingredients together, pour into pan and bake for 40-45 minutes.

    Fantastic recipe! I didn't have any jack cheese, so I subbed cheddar and it was great. I also used 2 whole eggs and 6 egg whites instead of all whole eggs. Turned out terrific, definately will be making this again for the flavor and the high protein content. Thanks! - 9/26/09
