Slow Cooker Wild Rice Soup

1.5 cups wild rice1 carrot1/2 medium onion1 celery stalk3 cloves garlic6 medium mushrooms6 tsp chicken basewater
Easiest way to make wild rice soup is in the slow cooker because you really don't need to watch it. Start it in the morning, go do your chores or whatever, and it'll be ready for you at lunch time. Better yet, put some in a thermos cup and have it at the half way point of that favorite hike.
Put rice and chicken base in a large pot to get it boiling, then transfer to your crock pot. Add minced garlic and chopped onion.
Cut celery length-wise and then into 1/2 inch chunks. Julienne the carrots into 2 inch long strips and add.
Pull stems out of mushrooms and cut in half, then cut the caps into 4 or 6 pieces.
Cook on high 3 hours, stir once in awhile.
Enjoy!

I enjoyed this soup after a few changes- was way too salty, so I added a bunch more water. Next time will skip the soup base and use homemade or boxed low sodium broth. I used a large portabella chopped instead of the small mushrooms, and added Garlic and Herb Mrs Dash and Basil and saute the onion. - 10/4/15
