Creamy Chicken Mushroom Soup

2 Chicken Breasts (no bone or skin) cut into bite sized pieces6 cups water3 boullion cubes2 stalks celery cut into pieces1 large carrot cut into pieces1 cup mushrooms sliced1.5 cups rice1 can Cream of Chicken SoupSalt, pepper, Parsley to taste
Bring water and boullion cubes to boil. Toss vegetables, rice and chicken in. Let boil for about 5 minutes and turn heat down to medium. Stir occassionally. Once rice is cooked, about 20-25 minutes add the cream of chicken soup and stir. Reduce heat to low and simmer for about 5-10 minutes.
