Radish Top Soup

2 teaspoons olive oil1 large onion, diced1 Garlic clove2 medium potatoes, sliced4 cups raw radish greens2 cups vegetable broth2 cups water1/3 cup milk (low fat) or replace with soy milk for a vegan version5 radishes, slicedCelery Salt to tasteFresh ground pepper to taste
1. Heat olive oil in a large saucepan over medium heat. Stir in the onion and garlic, and saute until tender. Mix in the potatoes and radish greens, coating them with the olive oil. Pour in vegetable broth and water. Add celery salt and pepper. Bring the mixture to a boil. Reduce heat, and simmer 30 minutes.
2. Allow the soup mixture to cool slightly, and transfer to a blender or use a hand blender. Blend until smooth.
3. Return the mixture to the saucepan. Mix in the milk. Cook and stir until well blended. Serve with radish slices.
