E's Chicken Fajita Quesadilla

2 chicken breasts - chopped1 can low sodium black beans1 yellow bell pepper - chopped1/2 onion - chopped4 cloves garlic1/2 tsp onion powder1/2 tsp chipotle chili pepper1/2 tsp cilantro1 cup salsa1 cup shredded cheddar cheese4 tortillas (recipe based on 100 cal tortillas)
Brown chicken breasts in olive oil.
Add beans, pepper, onion, garlic, and spices. Heat thru.
Spray glass dish. Spoon chicken mix into tortilla. Add salsa & cheese. Close. Bake 15 min @ 400 until slightly brown and crispy.
Serving Size: Makes 4 tortillas
