1 cup almonds1 cup walnuts (I use pecans)10 large medjool dates, pitted2 pinches salt1/4-1/2 tsp peppermint extract1 1/2 tsp vanilla extract1 tsp cinnamon1/2 cup shredded, unsweetened coconut3 tbsp cacao powder1 tbsp honey
In the food processor, process nuts to powder. Add dates & blend until sticky. Add the remaining ingredients & blend. (Adjust honey & peppermint to your liking.)
Using your hands, roll into balls, then roll in cinnamon, shredded coconut, or cacao nibs. Store in refridgerator or freezer for freshness.
