Mini Turkey meatload with roasted red potatoes

Ingredients
For mini meat loaf:1 pound turkey ground1.5 cup chopped onion1 cup green bell peppers3 TBS ground flax seed6 oz waterFor potatoes:4-5 small red potatoes, quarteredMrs. Dash, garlic powder, sea salt
Directions
Pre heat over to 475 degrees
Place quartered potatoes on lined cookie sheet, spray with PAM or other vegetable spray, lightly sprinkle on sea salt, garlic and Mrs. Dash if desired, place in over at least 20 min before meatloaf, as the potatoes have a much longer cooking time.

combine 1 pound ground turkey, onion, bell pepper, flax seed and water in one bowl. Flax seed takes places of eggs in traditional recipes. Hand mix all ingridents together, form into larger muffin pan lined with pam. Ensure that product does not spill over, it will slightly rise, fill each muffin cup about 2/3 of the way to ensure proper cooking and crispiness. Cook until top layer is golden brown approximately 20-30 min the thicker the larger the muffin pan the longer the cook time.
