Mushroom Soup

Ingredients
Package and a half of mushrooms (24oz size)2 Tbsp coconut oil1 cup chopped carrots1 cup sliced onions1/2 cup chopped celery Heaping 1/4tsp thyme, dried6 cups chicken stock1tsp pepper
Directions
In the big stock pot, melt the coconut oil. Add carrots, onions, and celery. Cook and stir until tender, but not browned, about 10 minutes. Stir in thyme and mushrooms, cook 5 min more.

Pour chicken stock in the pot, season with pepper. Cover, simmer for 30 min over low heat.
