Harira: Moroccan Chickpea Stew

Ingredients
6 cups (3 cans) chickpeas OR 1/4-lb dried chickpeas1 cup chopped onion1/2 cup chopped celery (or add more onion)1 28-oz can diced tomato in their own juices (reduced sodium, if possible)2 tsp ginger2 tsp tumeric1 tsp black pepper1 tsp cinnamon1/2 tsp nutmeg1/4-lb (about 2/3cup) dried green lentils1/2 cup dry brown rice4 cups vegetable stock/broth1/2 cup chopped fresh cilantro
Directions
If using dried chickpeas, cover with water and let hydrate for 8 hours. Chop onion and celery. Add all ingredients to large stockpot and simmer for 45 minutes to 1 hour.
