White Turkey Chili w/ dijon mustard

1 tbs olive oil2 cups yellow onion, chopped3 cloves garlic, minced1 bay leaf2 tsp cumin2 tsp chili powder2 tsp cayenne1 lb ground turkey breast2 - 14.5 oz cans of white beans (great northern beans)1 can chopped tomatoes preferably fire roasted with green chilis4 oz diced green chilis16 oz of frozen corn32 oz low-sodium, fat free chicken broth2-3 tbs dijon mustard
Sautee onions, garlic and spices (including bay leaf) in 1 tbs olive oil in a dutch oven or large pot over medium heat until soft, about 10 minutes. Add ground turkey and brown and break up for about 10 minutes. Add chopped tomatoes, beans, green chilis and frozen corn to meat mixture and cook for about 5 minutes. Add chicken stock and bring to a boil over high heat. Reduce heat to low and simmer for 10 minutes. Add dijon mustard and stir to incorporate. Cook for an additional 5-10 minutes until soup is simmering. Add salt and pepper to taste. Enjoy!!!
