Chris's Frittata

Ingredients

2 carrots finely chopped1 onion finely chopped1 red bell pepper chopped100g bacon chopped2 cloves of garlic crushed6 fresh eggs beatensalt & pepper to taste
I a none stick cooking pan with a lid...
Heat oil over a low heat
Add carrots, garlic & onions and fry for a few minutes.
Add bacon & bell pepper and fry for a further 8 minutes.
Add beaten eggs and stir quickly to distribute mixture through eggs.
Leave on low heat with lid on pan for 10 mins until set.
Remove from heat and leave a few more minutes to make sure all is set.
Turn out onto plate and cut into 8 slices.
Serve warm or cold as meal or as snack.
Serving Size: Make 8 snack size slices
