Zesty Spinach Omelet

2 cups fresh spinach2 large eggs, beaten1 tbsp water1 tsp dehydrated onion flakes3 squirts, EVOO (from mister)Sea Salt, black pepper, to tastedash Tabasco sauce
chop spinach into small pieces
whisk eggs, water in medium bowl
add onions,spices and chopped spinach;
stir to mix well,
pour all into small, non-stick warm skillet, scantly oiled with 3 squirts olive oil
let sit on medium heat for 2 -3 minutes,
turn,
let sit for 2-3 minutes more, until done to your desired consistency
serve with dash of tabasco
