Ingredients
1 package Maruchan Ramen Noodles, dry48 oz (6 cups) Safeway Low Sodium Reduced Fat Chicken Broth1 cup chopped zucchini1 cup chopped mushrooms, reserve 2 tbsp finely chopped3 large scallions, sliced, separated into green and white parts2 tbsp fresh cilantro, chopped1 tsp grated ginger root1/2 tbsp Kikkoman Low Sodium Soy Sauce1/2 tsp ground sea salt1/2 fresh lime, juiced (about 2 tbsp)1/2 tsp curry powder1 tbsp Sriracha Hot Chili Sauce (Rooster)Pam Cooking Spray, Extra Virgin Olive Oilgarlic powderground ginger
Directions
In a non-stick stock pot or dutch oven, spray Pam to cover bottom, heat skillet over medium. Add white part of scallions, finely chopped mushrooms and a sprinkle of garlic powder. Spray vegetables to coat and cook until mushrooms start to change color. Add cilantro and ginger, spray with Pam and stir. Once cilantro starts to turn brighter green, add chicken broth and bring to a boil. Add noodles and loosen the block as the noodles soften. When noodles are still a little firm, add zucchini and remaining mushrooms. Stir in lime juice, curry powder and soy sauce and chili sauce. Simmer until vegetables are cooked. Divide into 5 bowls and serve, topped with green parts of scallions.
