HG Top Banana Bread

Ingredients
1¼ cups whole-wheat flour ¼ cup all-purpose flour ¾ cup Splenda No Calorie Sweetener (granulated) 1½ cups mashed ripe bananas (about 3 bananas)½ cup fat-free liquid egg substitute ½ cup no-sugar-added applesauce 2 teaspoons baking powder 1 teaspoon vanilla extract ½ teaspoon cinnamon ½ teaspoon salt Optional toppings: I Can’t Believe It’s Not Butter! Spray, Cool Whip Free
Directions
Directions Preheat oven to 350 degrees. In a large mixing bowl, combine both types of flour, Splenda, baking powder, cinnamon, and salt (in other words, all the dry ingredients). Mix well. In a medium mixing bowl, combine mashed bananas, egg substitute, applesauce, and vanilla extract (all the wet ingredients). Mix thoroughly. Add the wet mixture to the bowl containing the dry ingredients and stir until just blended. Spoon batter into a large loaf pan (about 9 inches by 5 inches) sprayed with nonstick spray. Bake for about 50 minutes, or until a knife inserted into the middle of the loaf comes out clean. Allow the loaf to cool slightly, then cut into eight slices. Spritz with some spray butter or spread on some Cool Whip Free just before serving, if you like.

    Did anyone feel like there was a lot of baking powder in this recipe, that is all I can taste when I eat it... I think next time I make it I'm only going to put one tsp in! Otherwise this was soo moist and it is definitely comparable to my not so healthy version! - 6/28/12
