Italian Zucchini Casserole (Low-Fat)

Ingredients
3 medium zucchini1 large onion, chopped1 clove garlic28 oz can diced tomatoes1 T Basil1/2 T Oregano1/2 T Garlic Powder Salt and Pepper
Directions
Peel and chop the zucchini. Spray a pan with cooking spray and saute the zucchini for 5-8 minutes. Drain and set aside. In the same pan, place the chopped onion and garlic and saute until transluscent. Pour in 1 28-oz can of diced tomatoes with the juice. Simmer, uncovered, for 10 minutes. Add the zucchini, spices, and salt and pepper to taste. Serve hot.
