Mini Baked Doughnuts

Ingredients
1 1/4 cups baking flour (I use whole-wheat pastry)1/2 cup granulated sugar1 1/4 tsp baking powder1/8 tsp ground nutmeg3/4 tsp salt1/2 cup light buttermilk1/4 cup egg beaters, lightly beaten1 1/2 tbsp Canoleo 100% canola oil margarine, melted
Directions
Preheat oven to 425. Spray your mini donut pan with nonstick spray and set aside.
In a large bowl, whisk together flour, sugar, baking powder, nutmeg and salt.
Add buttermilk, egg, and margarine to flour mix and stir until just combined.
Fill each donut cup approx 1/2 full.
Bake 4-6 minutes or until top of donuts spring back when touched. Let cool in pan 4-5 minutes before removing.
Top with whatever you like :)

Serving Size: makes 24 mini donuts, 2 per serving
