3 Tbsp. olive oil1.5 cups onion, chopped2 stalks celery, chopped2 carrots, chopped2 cans beef broth1 can chicken broth1 pound dry lentils2 bay leaves1 tsp. dried thymes (ground or leaves)1 tsp. black pepper1 cup water
Heat olive oil in large pot. Add onion, celery, and carrots and cook until tender. remaining ingredients. Bring to boil. Reduce heat and simmer over medium heat 30- 40 minutes until lentils have reached their desired tenderness.
