South Beach Apple Butternut Squash Soup

1 - TBSP extra virgin olive oil1 - Small onion chopped2 - Pounds butternut squash peeled, seeded, cut into 1 inch pieces.3 - cups chicken broth1/2 - cut unsweetened apple cidersalt and pepper to taste
Heat oil in a large saucepan over medium heat. Add onion and cook until soft and lightly browned. add squash cover and cook ten minutes till tender. Add broth and simmer 15 to 20 minutes. Using slotted spoon transfer solid ingredients to a blender with apple cider and puree until smooth. Add 1-1/3 cups of the cooking liquid and puree until smooth. reheat and season with salt and pepper to taste.
