Breakfast Quiche To Go

Ingredients
1 cup liquid egg substitute2T heavy whipping cream (can be omitted)1 (9 oz) pkg Green Giant frozen spinach, no sauce1/4 tsp nutmeg3/4 cup red bell pepper, chopped3/4 cup onion, diced1 cup Kraft Italian five-cheese, shredded
Directions
Preheat oven to 325 degrees. Thaw and drain spinach, chop/dice bell pepper and onion. Combine liquid egg substitute with heavy whipping cream, set aside. Sprinkle nutmeg over spinach and mix with bell pepper and onion. Add to egg mixture and stir in cheese. Separate evenly among six jumbo-size muffin wells.
