Boingo's Swedish Meatballs

Ingredients
1 pound ground meat1 egg1 cup bread crumbs1/2 cup onion or shallotsspices: salt, pepper, parsley, garlic, to taste2 tablespoons canola oil or similar2c mushrooms, sliced2 cans beef broth2 tablespoons cornstarch -- adjust to get the gravy to the thickness that you like3 tablespoons sour cream8 cups egg noodles
Directions
Cook noodles. Strain and set aside,

Heat oil in frying pan.

While noodles are cooking, mix ground meat, bread crumbs, egg, onions and spices. Shape into 1 inch balls. Drop into hot oil and brown on all sides. Add broth and mushrooms. Cover and cook until meatballs are well done and mushrooms are soft. Remove about 1/2 cup of broth and stir in the cornstarch. Retun to pan with constant stirring to avoid lumps. Add sour cream.

Pour over noodles and serve.

Makes about 10 servings.
