This Makes 3 Quesadillas.All of the amounts can be varried depending on taste2-10 oz fresh or frozen spinach 3 8 inch tortillas1-3 cups shredded cheddar cheese 1-3 cups sour cream 1 boneless chicken breast2 tbsp taco sauce (optional)2 tbsp butter (optional)2 shakes pepper (optional)3 cups water2 cups fres salsa (optional)
I use frozen spinach. Start off by boiling the water and steaming the broccoli. Cut the chicken unto cubes. In a pan add the butter, pepper, and chicken. Cook the chicken through. After the spinach is soft enough add it to the chicken mix. Let simmer for about a minute. Add the chicken mix to the tortill and add cheese. Add sourcream and fresh salsa as desired.
