Ellie's Vegan Cabbage Roll Filling

Ingredients
*Brown Rice, medium grain, 2 cup Zucchini, 1 cup, sliced Onions, raw, 1.5 medium (2-1/2" dia) Garlic, 3 cloves (remove)Mushrooms, fresh, 3 large Tofu, extra firm, 1 blockBeans, red kidney, 1 cup *Ragu Mushroom Pasta Sauce, 0.25 cup Green Peppers (bell peppers), 1 cup, chopped
Directions
Cook rice as directed on box. Chop up all ingredients (except beans and sauce). In a frying pan, cook up onions and garlic until brown and soft. Then, add the other vegetables until soft. Combine rice, cooked vegetables, tofu, beans, and pasta sauce.

Serving Size: Makes 18 Cabbage rolls
