Potato & Broad Bean (Fava) Stew

*Potato, raw, 1.25 large (3" to 4-1/4" dia.) Onions, raw, diced .5 large Garlic, finely chopped 1 clove Beans, Broad (Fava), .5 cup Tofu, firm, diced 250 grams Mushrooms, fresh, chopped 3 medium *Mustard - Maille-Dijon Seeded, 1 tspTomato Sauce, 30 grams Red wine vinegar, 2 tbsp Olive Oil, 4 tbsp Salt, 1.5 tsp Pepper, black, 1 tsp
Chop potatoes in chunks and steam. Pod broad beans and steam with potatoes for a couple of minutes, then retrieve and de-shell skin ready for fry. Chop all other ingredients. I like to add dill, parsley, basil and a touch of tarragon. Fry steamed potatoes in 2 tbsn oil. If it sticks, add a little water. Add the rest of the oil, onion, garlic, herbs and beans. When onions are coloured, add mushrooms, tofu and herbs and use mustard, vinegar, tomato sauce and salt & pepper to taste. Add some water to get the sauce consistency you like. Voila!
