Oh Henry Butterscotch Squares

BASE: whole graham crackersFILLING:butter, unsalted 3/4 cupbrown sugar, packed 2/3 cupmilk, 1/2 cupvanilla, 1 tspGraham cracker crumbs, 1 1/4 cupsTOP:whole graham crackersICING:icing sugar, 1 1/2 cupsbutter, 3 tbspwater, 1 1/2 tbspvanilla, 1/2 tsp
Line ungreased 9 x 9 pan with whole crackers trimming to fit.
Combine butter, sugar, milk and vanilla in saucepan. Bring to boil and simmer for 5 minutes. Remove from heat. Stir in crumbs. Pour over crackers in pan. Cover with layer of whole crackers, trimming to fit. Cool. Ice with butter icing (see below). Cut into 36 squares.
Icing
Beat all together in small bowl. Add more water if icing seems to stiff to spread or more icing sugar if it is too runny to hold its position wherever it is spread.
Serving Size: makes 36 squares
