Fresh Red Cabbage Pickle

Ingredients
250g red cabbage (approx 1/8 of a cabbage)40g of red onion (approx 1/4 of an onion)2 Tablespoons on mint40ml of lemon juice1/4 teaspoon of cayenne peppersalt and pepper to taste
Directions
Use your food processor with the slicing attachment

Run the red cabbage, onion and mint through the food processor

Tip it into a bowl and add the lemon juice, cayenne pepper and salt and pepper.

Toss the salad well to mix the lemon juice through.
