Spicey Chicken and Barley

3 tsp ground cumin2 tsp chili powder1 tsp ground cinnamon1 tsp dried mint leaves1 tsp garlic powder]1/4 tsp red pepper flakes to taste16 skinless chicken tenders1/2 tsp vegetable oil1 1/2 chopped onion1 C chopped red pepper1 TBL low sodium soysauce4 cups FF low sodium chicken broth1 1/2 C pearl Barley6 TBL chopped green onions
1. combine first 7 ingredients: rub chicken with half of it
2. Heat oil in skillet, add chicken cook and both sides 3 min. remove from pan
3.add all other ingredients except the green onion
4.heat to boiling then reduce heat to low and cover for 45 minutes uncover for 10 minutes. Remove from heat and let stand for 15 minutes add chopped green onions to top.
6 servings ( serving size: 1 C barley mixture 2 chicken tenders )
