Lemon Shrimp on Rice

Ingredients
1 cup long grain white or basmati rice1 14oz can chicken broth1/8 cup water1 T butter2 cloves garlic, minced1/8-1/4 teaspoon red pepper flakes1 t lemon zest1 pound medium shrimp, peeled and deveined1 lemon, sliced1 T chopped fresh cilantro
Directions
Combine Rick, chicken broth, water, butter, garlic red pepper and lemon zest in a small saucepan. Bring to a boil; reduce heat to low; cover and simmer until rice is tender; about 20 minutes.

Uncover the rice and add the shrimp and lemon slices. Cover, turn heat to medium and steam for 4-5 minutes until shrimp are cooked through.

Top with cilantro and serve immediately.
