Onion, Leek Potato Soup

Ingredients
Onions, raw, 3 cup, choppedLeeks, 6 cup Chicken Broth, 6 cup (8 fl oz) Thyme, fresh, .25 tsp *Lemon Juice, 1 fl oz Half and Half Cream, 1 cup Mashed Potatoes, dehydrated, 1.5 cup Olive Oil, 4 tbsp Butter, salted, 1 tbsp Garlic powder, .50 tbsp
Directions
Heat a 8 quart stock pot over medium heat. Add olive oil, and butter, melt. Add onions cook until translucent and lightly brown. Add leeks and 1/2 cup water. Stir well and put lid on and turn down to medium low. Cook 15 minutes. Add chicken broth and seasonings, return to boil and simmer 45 minutes. Add potato flakes, stir to completely incorporate. Add 1/2 and 1/2. Taste and adjust seasoning - S&P TT.
