Low Fat Egg Soufflé

Ingredients
1 Carton Southwestern Egg Beaters1/2 of a yellow or red onion, chopped8 spears of asparagus, bottoms cut1 cup raw spinachGarlic flavored Pam
Directions
sauté vegetables in Pam. Add cook vegetables to 4 individual soufflé cups. Pour even amounts of Egg Beaters over the vegetables. Stir. Bake at 350 for about 25 min.
I like to make them ahead of time, put them in plastic bags and re-heat in the microwave for about 1-1/2 min. Sometimes I top them with my homemade salsa.
