1.5 lbs chicken breast1 yellow onion2 cloves of garlichalf green pepper1 tbs olive oilsplash of white wine1 cup of tomato saucehalf large potatohalf cup of brown ricebay leaf1/2 tsp of oregano 1 cup of water
Cut chicken into large chunks. Begin to brown(med/high heat) the chicken in the olive oil and add onions, garlic, green pepper, and bayleaf in the olive oil/chicken mixture until soft. Add white wine and simmer for 3-4 mins and then add tomato sauce. Cut the potato into large chuncks and add it to the pot with the oregano. Add enough water to just cover the top of the chicken (half to 3 quarters cups of water) close the lid and let simmer on low heat for about an hour or until potatoes are cooked and chicken is tender.
