Faux Potato Pancakes (cauliflower)

1 pound steamed cauliflower1/2 cup liquid egg whites1/4 cup oat fiber (or flour)your choice of seasonings
Preheat a skillet to medium heat, spray with Pam.
Blend up the cauliflower so that it resembles mashed potatoes. (I use a stick blender).
Mix in the egg whites, flour, and seasonings.
Plop onto skillet in pancake form, making 4 patties. Cook for a while until it starts to brown. Flip, and cook an additional 4ish minutes.
Serving Size: makes 4 servings (1 pancake each)
