Ingredients
4 boneless chicken breast4 strips bacon1 28 oz can tamatoes1 can tomato soup2c rice1 lg onion1pepper1 8oz mushrooms2tbsp chili powder1tbsp cumin1/2tsp salt1tsp pepper2tsp olive oil
Directions
cook rice as per pg. cook bacon crisp and drain on a paper towel. sautee onion,peppers and mushroom together in olive oil. put everything into a casserole dish save a pitch of spices for top of chicken. grill and broil chicken only half cooking. set chicken on top of rice mixture and bake for 45 mins in a 350 oven.
