New Seasons Quinoa Salad

1T Coconut oil1C Quinoa2C Veggie broth (or chicken)1 medium onion, diced2 garlic cloves, minced2 medium tomatoes, diced1 green chili pepper, minced1/2 tsp cumin powder1 tsp chili powderJuice of 1 lime1/4 c pumpkin seeds1/4 c walnuts, chopped1 c fresh cilantro
Add Quinoa and broth to a sauce pan. Bring to a boil. Turn heat down to low. Put on lid and cook for 10 minutes.
Meanwhile, melt coconut oil in saute pan. Add onions and saute until soft. Shut off heat, Add chili pepper, garlic, walnuts, and pumpkin seeds. Stir.
Add onion mixture to quinoa. Stir. Add cilantro. Stir.
Serve.
