Chicken and Blueberry salad with Pomegranate Vinaigrette

1lb chicken breast, skinless1 T. Pepper1/2 tsp. salt1/4 c. pomegranate juice4 tsp. sugar1.5 T. white balsamic vinegar1 tsp Canola oil8 c. spinach leaves1/2 c. thinly sliced red onion2 c. blueberries1 c. crumbled blue cheese
1. Heat grill pan or skillet over medium high heat. Coat pan with cooking spray. Cut up chicken into chunks and sprinkle with salt and pepper. Coat chicken with cooking spray and add to pan. Cook to desired doneness.
2. Combine pomegranate juice, sugar, vinager and oil in small bowl. Whisk until blended.
3. Divide spinach into 4 bowls. Arrange Chicken, onion, blueberries evenly over spinach. Sprinkle with 1/4 c. blue cheese.
