Lentil Soup with swiss chard

Olive Oil, 1 tbspPancetta, 1 oz, choppedCarrots, raw, 1.5 cup, choppedFennel, 1 bulb, choppedOnions, raw, 1 medium, choppedThyme, fresh, 1 tspHerb de Provence, 1/2 tspTomato Paste, 3 tbspChicken Broth, 5 cupSwiss Chard, 4 cup, chopped
in a large soup pot or dutch oven: brown pancetta in olive oil. meanwhile chop carrots, onion and fennel. add vegetables once pancetta is browned and crispy.
add salt & pepper and thyme - saute until translucent (about 7 or 8minutes). add tomato paste, cook a few minutes. add rinsed lentils and all the broth. bring to a light boil, then simmer with the lid on until lentils are soft...20 - 40 minutes. finally add cleaned, chopped swiss chard and cook until it is all wilted and combined. season again with salt & pepper if needed. serve.
Serving Size: 5-6 bowls
