Chicken Breast with Honey-Balsamic Glaze

Ingredients
1 1/2 tsp dried thyme1/2 tsp table salt1/4 tsp black pepper1 tsp olive oil1 pound uncooked boneless, skinless chicken breast (4- 4oz pieces)2 tbsp balsamic vinegar2 tbsp honey
Directions
Combine first 3 ingredients; sprinkle over both sides of chicken.

Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 7 to 8 minutes on each side or until chicken is done.

Transfer chicken to a platter; keep warm. Reduce heat to medium-low; add vinegar and honey to pan. Simmer 1 minute or until glaze thickens; stir constantly. Pour glaze over chicken.

    I used a very similar recipe last night. The difference was the addition of garlic (I used fresh, minced).

    It was a major hit with me and my 3, picky-eater sons.

    We thought this was good! thought it was alittle strong with the thyme so maybe I used alittle too much? Will try less next time. I also had spinach I had to use up so I threw in some onions and spinach in the pan after the chicken was done and then removed it before making the glaze. Very good! - 12/20/12
