Fat Flush Chicken Soup

Ingredients
2 lbs. chicken breast-diced1 tsp olive oil1 cup diced red pepper1 cup onion diced1 cup summer squash diced1 cup zucchini diced4 cloves garlic minced46 oz V8 Vegetable Juice14 oz. crushed tomatoes14 oz. chickpeas1 tbs cumin1 tbs fennel1 tsp turmeric1/4 cup parsley1/4 cup cilantro
Directions
Brown chicken in pan with olive oil. Take chicken out and set aside. Put in summer squash, zucchini, pepper, onion and garlic cook until tender crisp. Add back in chicken, add 46 oz. v8 juice, 14 oz. crushed tomatoes and spices (grind spices if they are in seed form). Simmer for 20 minutes uncovered. Add cilantro and parsley cook for 5 minutes more covered.
