GUACO KALE SALAD

Ingredients
Kale, 6 cup, choppedAvocados, 2 fruit without skin and seedsRed Ripe Tomatoes, 1 large wholeOnions, raw, 1/2 of med onionLime Juice, 1 lime yieldsCilantro, raw, 2 tbspChili Pepper, 2 peppersGround Cumin, 1 tbspStevia, 1 tspSea Salt, 1 tsp
Directions
1. Wash your produce. Dry.
2. Chop time! Dice tomatoes, slice onions into thin crescents, chop cilantro finely, chili peppers, cut limes, gut out avocado and chop kale into thin strips.
3. Combine all ingredients besides tomato and kale. Start mashing until you get a smooth guacamole texture. Depending on how ripe your avocado is, it may be a little chunky but whatever it's DELICIOUS.
4. Blend in kale and tomatoes. Mix.
5. Adjust with black pepper and sea salt. EAT.
6. SO GOOD.

    Just had this salad & it's delicious! I left out the stevia, partially because I don't really use stevia anyway & partially because it didn't say when I should add it. Also, I added extra cilantro and cumin..just because I love the flavor of both. Next time I'll dice the onion instead of slicing. - 1/10/12
