One roasting chickenOne box chicken broth (low sodium)One large onion, choppedrubbed sageblack pepperred peppercumin
Combine onion, chicken and broth and any extra water needed to cover chicken. Bring to a boil, reduce heat and let simmer until chicken begins to fall off the bones, about one hour. Once done, pull chicken from the broth and place on platter to cool. While the chicken cools, bring the broth and any extra water needed at this point to a boil. Add the extra spices to taste. Add the Rotini pasta and allow to boil until the pasta is nice and soft, but not mushy. While that is boiling, remove chicken from the bone. Once the pasta is done, return the chicken, without the bones to the pot. It is ready to eat.
