Salmon croquette

Wild Salmon, canned, 6 oz. Bread, wheat, 3 slice 1/4 Onion, raw, chopped Cilantro, raw, 2 tbsp *Extra Virgin Olive Oil, 1 tbsp Lemon juice, 1 tbsp Egg Beaters, 0.5 cup Garlic powder, 1 tsp Pepper, red or cayenne, 1 tsp Pepper, black, 1 tsp
Cook onions in 1 tsp. of olive oil.
Toast bread and grind them into bread crumbs.
Mix cooked onions, salmon, 1/4 cup bread crumbs, 1/4 cup egg beater, cilantro, lemon juice, garlic powder, black pepper, and cayenne pepper together.
Refrigerate for an hour (or overnight preferred) (OPTIONAL STEP)
Form 2 oz. patties. Dip each in remaining 1/4 cup of egg beater and coat with remaining bread crumbs.
Cook in 2 tsp. of olive oil for about 3 minutes per side.
Serving Size: 5 - 2oz. patties
