Mark Bittman Sweet Potato Quinoa Salad

1/4 cup red onion chopped1 large sweet potato, peeled and cubed- boil with salt until tender1 cup dry quinoa- cook to package directions, rinse and drain1/4 cup olive oil2 T balsamic vinegar1/2 a pomegranate, seeds removed1/4 cup chopped parsley or chivesSalt and pepper to taste
Mix olive oil, vinegar together and toss with sweet potato, quinoa, and parsley. Add salt and pepper to taste. Top with pomegranate seeds. Serve warm or cold.
