Chicken Rollatini with Spinach

Ingredients
8 thin chicken cutlets (3oz each)1/2 Cup Marcum Seasoned Bread Crumbs1/4 Cup Great Value Parmesan Grated Cheese6 tablespoons egg whites or egg beaters9 oz Green Giant Frozen Chopped Spinach6 tbsp Crystal Farms Part-Skim Ricotta Cheese6 oz Sargento Reduced Fat Mozzarella CheeseOlive Oil cooking spray
Directions
Preheat oven to 450 degrees.

Lightly spray 9x13 baking dish.

Combine breadcrumbs & 2tbsp grated cheese in a dish.

Put 4tbsp egg whites in a bowl.

Add 1.5 oz mozzarella cheese, remaining grated cheese, spinach (make sure to get all water out), remaining egg whites, and ricotta cheese to a bowl and mix well.

Lay out chicken and spread about 2tbsp of cheese mixture on each piece. Roll loosely starting at the small end and keep seam side down.

Dip each piece of chicken in egg, then in breadcrumbs, and place seam side down in baking dish.

Bake 25 minutes. Top with remaining cheese. Bake until cheese is melted (about 2mins).
