1 large onion3 cloves garlic1.25 lbs lean ground beef2 cans diced tomatoes1 bell pepper (red, yellow or green)1.5 cups frozen or fresh corn2 - 14 oz cans kidney beans or 3 cups soaked beansOptional:1 Tbsp cumin1 tsp paprika1 Tbsp chili powdersalt and pepper to taste
Chop onion, chop pepper into half inch chunks, and dice or press garlic.
In a stewpot, sautee onion, garlic, bell pepper and beef until brown. Drain any excess fat. Add undrained tomatoes and bring to a simmer. Add corn, drained beans, and spices (if desired) and simmer for half an hour or more. Add salt and pepper to taste.
Serving Size: makes 8 - 10 servings
