Peruvian Quinoa Soup

Ingredients
7 cups vegetable stock3 tablespoons soy sauce3/4 cup quinoa1.5 cup chopped potatoes1 large carrot sliced3/4 cup diced onion4 cloves garlice minced1 cup cabbage sliced1 large tomato, chopped1/4 cup minced fresh parsley1/4 cup minced fresh cilantroSalt and pepper to taste
Directions
Put stock & soy sauce in pot and heat over medium-high heat. Add quinoa. Chop veggies in order starting with potatoes, and add to pot when chopped/sliced, diced.

Don't add parsley or cilantro yet!

Cook until potatoes are tender (45 minutes) then add parsley and cilantro. Add salt and pepper to taste.

Serving Size: Make 6-8 bowls of soup
